Cinnamon Rolls




3 1/2 cups all purpose flour (I used unbleached all purpose)
1/3 cup sugar
1/2 teaspoon salt
2 packages regular or quick active dry yeast
1 cup very warm milk
1/4 cup butter, softened
1 large egg

Mix 2 cups flour, sugar, salt, and yeast together in a big bowl. Add warm milk, 1/4 cup butter, and egg. Beat with electric mixer for 1 min at low speed and then 2 min at medium speed. Stir in remaining flour.

Place dough on a lightly floured surface and knead for 5 minutes. Place dough in a large greased bowl (not metal) and turn it over so that all sides get greased. Cover the bowl loosly with plastic wrap and let rise for 1 hour and 30 minutes.

Make filling. (below)

Gently push dough to deflate. Flatten dough with hands on a lightly floured surface into a 15x10 inches rectangle. Top with filling. Roll up tightly beginning at the 15 in side. Cut the roll into 15 slices (use embroidery floss by sliding it under and then crossing it over to get a nice clean cut). Place in an ungreased 9x13 in pan. Cover loosly with plastic wrap. Let rise for 30 minutes.

Bake at 350 degrees for 30 minutes.

Filling
3/4 cup brown sugar
1/4 cup flour
1 TBS cinnamon
1/3 cup butter, softened

Frosting
8 oz cream cheese, softened
1/4 cup butter, softened
1 1/2 cup powdered sugar
1 teaspoon vanilla
