If you are like me, during the school year breakfasts need to be on the table quickly, and sometimes for some of the family they need to be to-go.
David likes to take breakfast with him on mornings he gets up at 5ish to go work out before work. Having a frozen breakfast burrito to take with him makes breakfast easy. All he has to do is throw it in his bag and go. At work, he just pops it in the microwave when he's ready to eat. Easy-peasy.
At home, having a breakfast full of protein and fast is sometimes a life-saver, not to mention yummy!
Breakfast Burritos
1 pound ground turkey sausage (I use Jenny-O Breakfast Lovers, but I've used pork sausage and ham. The turkey sausage had the best flavor in our opinion.)
1/2 onion, chopped
12 eggs
8 oz Extra Sharp Cheddar Cheese, grated
Salsa, mine was homemade from the tomatoes from my dad's garden and put in an old salsa jar while we eat it up.
20 tortillas
Foil
Zipper Bag
In a skillet, scramble your meat with the onions. When the meat is done, add 12 eggs and scramble them, too. Place strips of foil down on the counter with a tortilla on each one. Put some egg/sausage mixture on top. Top with cheese and salsa. Roll up tortilla. Roll up foil. Place in a zipper bag. Freeze until ready to eat.
To heat up: Unwrap, put on plate. Heat up for one minute.
